{go make me} ginger, chili, garlic and lime chicken
What's on your plate tonight? These chicken drumsticks are for our dinner and thought I'd quickly photograph them just to make you jealous! Really yummy with the perfect combination of ginger, chili, garlic and coriander (cilantro) seeds. After baking, douse with freshly chopped coriander and a squeeze of oven-roasted lemon. Ginger, chili, garlic and lime chicken
1kg Chicken drumsticks
12 cm stick of fresh ginger
2 long red chilies
4 cloves fresh garlic
2 tsp coriander (cilantro) seeds
2 tsp salt
3 tbl peanut oil
2 limes
Fresh coriander
Pre-heat oven to 200oC (390oF). In a small fry pan, gently heat coriander seeds until fragrant. In a blender, add ginger, chilies, garlic, seeds, salt and oil. Blend until a thick paste forms. Rub all over chicken and place into a baking tray lined with paper. Halve limes and add to pan
Bake for 35 to 40 minutes or until browned. Chop coriander and sprinkle over chicken. Serve with limes
