The sunny days between Christmas and New Year's mean picnics by the harbour and swimming at the beach. My favourite picnic food...goat's cheese tart with loads of sweet caramelised onions and a light green salad. Here's a tried and true recipe for goat's cheese lovers like me
caramelised onion and goat's cheese tart
2 sheets shortcrust pastry
1 tablespoon olive oil
4 small brown onions
sprigs of fresh thyme
Caramalised balsamic vinegar or honey
4 eggs
1 cup thickened cream
100g goat's cheese
Preheat oven to 220oC (200oC fan forced). Line a 21 x 30 cm tart pan with pastry and trim edges. Line pastry case with baking paper and add weights (ceramic, rice or dried beans). Bake for 10 minutes, remove paper and bake for a further 5 minutes
Heat oil in a frypan on a low heat and slice onions. Cook onions (trying to maintain onion shape) and some thyme leaves until caramelised. Gently remove from heat and brush with caramelised balsamic vinegar or honey
Whisk together cream and eggs and season with salt a pepper
Reduce oven temperature to 220oC (180oC fan forced) and pour egg mixture into case. Place goat's cheese and onions gently into on top of mixture with sprigs of thyme
Bake for a further 20 minutes or until firm and browned
