{go make me} Christmas packaging and gingerbread recipe
Gingerbread is synonymous with Christmas and these little biscuits would be a delight to make and give as gifts. Besides, I was itching to use my new molds and the swan mold is one of my favourites
Inspired by the swan's elegant wings, I designed a template for you to download and use as a wrap on your gifts. The wings simply interlock and hold in place. I think they also could be interpreted as angel's wings too, perfect for Christmas.

The gingerbread recipe (at end of the post) works wonderfully with simple cookie cutters as well if you don't have any fancy molds. Happy baking!
Recipe after the break
1 cup Molasses or Treacle
1 cup dark brown sugar
3 tsp ground ginger
2 tsp cinnamon
1/4 tsp salt
1 tsp vanilla
1 cup unsalted butter
1 large egg
5 cups sifted flour
1} Heat molasses in large saucepan to just hot. Remove from heat, stir in butter and brown sugar. Let cool
2} Sift flour, cinnamon, ginger and salt
3} Add flour mixture a little at a time into the warm molasses mix leaving a little flour set aside
4} Add egg and vanilla and combine well. Add last of the flour and combine well
5} Seperate dough in two and wrap in cling wrap. Chill for 3 hours or overnight
6} Roll out and press into molds or use cookie cutters
7} Place onto lightly greased cookie sheet and bake for 8 minutes at 170oC/350oF. Larger cookies may require more baking time
