Orange-Blossom-Cakes

As promised, here's a delicious recipe to make Orange Blossom Cakes featuring orange, almond and craisin cake. Dress your cupcakes with cake wrappers available as a download from my Go Make Me shop. Recipe to follow. Yum!

Orange, Almond and Craisin Cake
Ingredients
125g (4 1/2 oz) butter, softened
2 teaspoons finely grated orange rind
2/3 cup caster sugar
2 eggs
1 cup self-raising flour
1/3 cup plain flour
1/3 cup almond meal
1/2 cup craisins
1/4 cup orange juice
2 tablespoons milk

Butter Cream Icing
90g (3 oz) butter
1/4 teaspooon orange essence
1 cup icing sugar
1 tablespoon milk
desired food colouring
pre-purchased flower decoration

1} Pre-heat oven to moderate 180oC/350oF (160oC/320oF fan-forced). Line a 12-hole cupacke pan with paper cases

2} With an electric mixer, beat butter and sugar together until light and fluffy. Add rind and eggs and mix well

3} Stir in sifted flours, almond meal, craisins, juice and milk. Divide mixture among cases and smooth surface

4} Bake cakes approximately 25 minutes. Cool on a wire rack

5} For butter cream, beat butter and essence in a small bowl with electric mixer until light and fluffy. Beat in sifted icing sugar and milk in two batches. Beat in a little of the desired coloring. Spread onto cooled cakes and decorate with flowers

6} Download wrappers from the Go Make Me shop to decorate the cupcake paper
